
This smooth, almost almond-green absinthe has a scent of fennel and aniseed. On the palate, this translates into a skilful balance between the sweetness of fennel and the floral character of wormwood, underscored by a slight bitterness and an aftertaste of aniseed. L’Entêté is an extraordinarily complex absinthe.
In 2010, Franck Choisne was instrumental in pushing through an amendment to the 1988 decree that banned the use of fennel in absinthe in France. According to the distillery’s historical recipe, fennel is an essential ingredient in the production of authentic absinthe. To celebrate this historic event and, of course, his personal victory, Franck created a green absinthe in 2012, naturally colored with chlorophyll, which he named L’Entêté (“the stubborn one” in French).
The plants are distilled and fresh leaves are infused to release their aroma and color in the same traditional way as the great brands of the Belle Epoque, of course using the distillery’s over 100-year-old copper alembic stills from Egrot.
