
You don’t hear much about those little peaches with a slightly more red flesh that are called Peche de Vigne in France. We know them as Vine Peaches or sometimes Wild Peach. In France, they’re planted in the rows in vineyards to give an indication of disease or other problems in the crop. In Combier’s Creme de Peche de Vigne, however, they play the leading role – and with flying colors. This peach liqueur is like an explosion of fruit and is delicious in a fruit salad or with a dry sparkling wine, and of course in cocktails such as a Perfect Lady or, why not, as a little Tiki inspiration.
Combier produces its Crème de Peche de Vigne by allowing hand-picked peaches to macerate in alcohol for three months. The fruit is then lightly pressed and distilled. The distillate is then mixed with sugar syrup.
